Where is your meat processed? Is it state inspected?
We use two trusted local processing facilities: Memphis Meats in Memphis, Indiana, and Green River Meats in Campbellsville, KY. Both are USDA-inspected facilities. Once processed, all of our cuts are carefully prepared in-house by our butcher to ensure the highest quality.
For reference, Indiana law requires that all meat intended for human consumption be processed in an establishment inspected by either the Indiana State Board of Animal Health (BOAH) or the USDA Food Safety and Inspection Service (USDA-FSIS). This guarantees that everything you bring home from Karv is both safe and fully traceable.
Can I get a price list?
Our full menus for the butcher shop, restaurant, and tavern are now published online and updated regularly. You’ll also find rotating specials, seasonal items, and discounted family bundles or boxes available in-store.
For large or custom orders—like bulk beef shares or freezer bundles—our butcher is happy to walk you through current pricing and help you choose the right package.
Do you have vegan or vegetarian food options?
While meat is at the heart of what we do, our restaurant menu includes scratch-made sides, fresh salads, and weekly specials that are vegetarian-friendly. Vegan options are more limited, but we do our best to make sure everyone can enjoy a meal with us.
If you have dietary needs, just ask our staff—they’re happy to recommend sides and dishes that work for you.
Can I purchase bones for my dogs?
Yes! We often have raw bones and trimmings available for your dogs. Just ask at the butcher counter and we’ll help you pick out the right size and cut. Many of our regulars stop in for treats for their pups while shopping for their own meals.
Do you only carry beef? What about other meats? Where are these sourced?
Nope—we’re more than just beef. In addition to our pasture-raised beef, we offer pork, chicken, house-made sausages, and rotating specialty items. Our beef is raised right here in Harrison County, while other proteins come from trusted local farms that share our values for humane care and sustainable practices.
Do you offer details on your meat, such as whether it is grass-fed, organic, free-range, etc.?
Yes—we believe in being transparent about what’s on your table. Our beef is pasture-raised and then grain-finished for the last six months to create the marbling and flavor people love. While not all cuts are certified organic, we focus on sustainability, traceability, and humane care.
As we expand with chicken, pork, and other proteins, we’ll continue to share details about how those animals are raised and sourced.
Do you raise all your meat? What farms does your meat come from?
We raise our own beef on our family farm in Harrison County, Indiana. For other meats, we partner with a select group of local farms that meet our standards for quality and care. Everything we sell is fully traceable back to its source, so you always know where your food comes from.
Do you offer bulk purchasing options? Can I buy a quarter or half cow?
